Eggplant Tofu Yaki Udon (GF)
In Japanese, "Yaki" means "cooked over direct heat" so a Yaki Udon is a Japanese stir-fry with udon noodles! This gluten-free recipe uses soy-free and vegan ingredients, and you won't miss the meat!
A few tips to make sure you get the full umami flavors: (1) Boil the noodles in salty water. (2) Cup4Cup Multipurpose Flour is gluten-free BUT taste and texture are comparable to the best AP flour—no grainy/gritty texture. (3) Add the cooked tofu at the very end to keep its crispiness!
INGREDIENTS:
8 oz Lotus Foods Udon Noodles (GF)
6 cups water, salted for boiling noodles
1/2 firm tofu, sliced
2 tbsp avocado oil
1 tbsp Cup4Cup Multipurpose Gluten Free Flour or any GF flour
3/4 tsp salt
1 tsp garlic powder
1/2 eggplant
1 red bell pepper, diced
chives, for garnish
sesame seeds, for garnish
For the Marinade:
1 tsp Chinese Five Spice powder
