What’s a Tataki?
Tataki is a Japanese cooking method used especially with tuna. It’s a quick cooking technique wherein you heat the pan to very high, quickly searing all sides of the fish so that it’s raw on the inside. Thanks to the Maillard reaction the fish will be well cooked on the outside and pink and moist on the inside.
